
Something I’ve not eaten for some time is a fry-up. This is because for a few years now, I’ve been trying to make my diet a little healthier. Obviously I don’t always succeed, because I’m only human, but this was a little win. For a time, I made a healthier version of the dish, but this wasn’t as satisfying as the real thing, so I stopped.
As our diet changed, it became necessary to come up with new ways to eat interesting, nutritious, and delicious food. This breakfast is one of those ways, and whilst it makes no pretence to be a fry-up, it is just as lovely.
Any of the individual ingredients can be substituted for your favourite version, or omitted altogether. We’ve recently cut out bread, but if you eat it, a slice of wholegrain toast under it all won’t be out of place, but honestly: it doesn’t need it.

Ingredients
4 vegetarian sausages (we use Linda McCartney’s Red Onion & Rosemary, as they’re very low in fat)
Cooking spray
2 rashers of turkey bacon
4 frozen hash browns
4 slices of halloumi
1/2 an avocado
- Preheat your oven to 200 degrees / 180 degrees fan / gas mark 6. Arrange the sausages and hash browns on a baking tray.
- Once the oven is hot, put the baking tray in the oven for 20 minutes.
- After the sausages and hash browns have had 8 / 9 minutes, heat a large frying pan over a high heat. Spray with cooking spray. Once it’s hot, add the halloumi and turkey bacon (remember: turkey bacon is raw poultry, it’s not cured as normal bacon is, so wash your hands well after handling it).
- Turn the bacon and halloumi intermittently, until browned on both sides. In between this, scoop out the flesh from the avocado with a tablespoon. Cut the half into two quarters.
- Everything should come together at the same time. Take the sausages and hash browns out of the oven and turn the heat down on the bacon and halloumi. Slice the sausages lengthways, and put 4 halves onto each plate. Lay a slice of bacon on top, then add the hash browns. Arrange the halloumi on top of this, and top with the quarter avocado. Serve with your choice of sauce or ketchup.
